I recently tried rice cheese, a lactose-free alternative to cheese that also happens to be soy-free (I’m still amazed with soy cheese, though). Rice cheese comes in several different varieties, but I got the “American cheese” style, because those thin orange slices used to be the perfect way to make a grilled cheese sandwich, being the right size and shape and all. This rice cheese was very good too; it is blander than Daiya cheese, it melts just like regular cheese, and it is a good source of calcium to boot. I just love having all these choices here!
